Salt Cured Sun Dried Olives

Our salt cured olives are a delicacy. Hand picked and packed between layers of sea salt , we patiently wait and tend to them for about two months for all the bitter juices to drain away, leaving a sweet, strong flavoured olive with a prune like texture. These are morish on a antipasta plate and devine in a pasta sauce where they soak up the flavours of the sauce.
